Egg salad

What is the best food you´ve made or tasted this year?  Already almost two months done of 2013 and I feel like it was early January yesterday.  I´ve been keeping busy for sure and I´ve been cooking a lot and everything from scratch.   My favorite meal of 2013 so far are Chinese Dumplings I made the other day.  I will tell you all about it next time.

I was gonna slice some veggies to serve with bread.  Then I decided to cut it very small and throw it in a egg salad.  It was very fresh and tasty, perfect with my homemade sourdough bread.

Egg salad 

  • Homemade mayo or sour cream, 3-5 tablespoons
  • 3 eggs
  • 1/2 red pepper
  • 1-2 spring onions
  • 1/3 cucumber
  • Salt and pepper

Cut the eggs and dice all the veggies very fine.  Mix everything together with the homemade mayo or sour cream.  Season with salt and pepper, about 1 teaspoon salt and 1/2 of pepper.

It got cold last week but the dogs at the farm next door didn´t mind it and were playing in the snow.  Thankfully this week it´s a bit warmer.

Daylight all day and all night – Watermelon and mint salad

This is my favorite time of the year.  Summer is kicking in, and what I love the most, since I can´t say the really warm weather (we don´t have much of that), is the almost 24 hour daylight.  I am one of those who don´t even want to use my blinds for the window.  I sleep well during the night when it looks like the time is only 1o o´clock in the morning all night.

In summer I prefer lighter meals.  I saw this recipe online some time ago.  I loved the ingredients so I had to try it and have been making it quite a bit since then.  It is fresh and it goes so well with all kinds of different food.

If you need to bring a dish to a brunch or a buffet and you don´t have much time to cook this is a nice dish to bring.

Watermelon and mint salad

  • Watermelon
  • Feta cheese, fresh.
  • Fresh mint
  • Good olive oil
  • A little salt if you like

Cut the watermelon and the feta into small cubes.  ( I even crumble the feta cheese). Chop the mint.  Mix it all together and drizzle with a good olive oil.

We got couple of friends, a couple, for dinner the other day. Foodwaves it was. Here are couple of recipes from that night.
beef tartar

The little hacker

  • Entrecode beef
  • Raw egg, just the yolk
  • Salt and pepper
  • Lemon
  • Green beans
  • Ruccola

In a mixer lightly ground the beef. Make patties and put the yolk on top. Season with salt and pepper.

Brown the Green beans in butter, season with salt and pepper.
Serve the beef (steak tartar) with the beans, ruccola and lemon. It´s a total must to squeeze a little bit of lemon on top of the beef.

The last course was light and delicious, the time was about 01.00 am and we all had eaten lots of meat, and lots of raw meat, so a healthy dish of eggplant was really what we wanted!

Eggplant sympohny

  • Eggplant
  • Seed mix
  • Ruccola
  • Camembert
  • Red onion

Slice the eggplant, season with salt and let it stand for a bit in a tray. Wash the salt of and dry it. Brush it with olive oil, salt and pepper.

On a grill pan, grill it on both sides for few minutes.

Salad dressing

  • Balsamic Vinegar
  • Olive oil
  • Salt
  • Pepper
  • Garlic cloves

Mix well

Serve with ruccola, red onion, the seeds mix, Camembert and the salad dressing
